Yum! And I had just finished my own sushi dinner, too! Although I can't make anything like that. I'm getting better, but slicing up the rolls is always a disaster for me. Do you have any suggestions for that? Excellent photo work, by the way.
In order for your sushi not fall apart when you cut them requires several important elements:
1 Be sure you're using rice suitable for making sushi. Nishiki rice is a sticky medium grain rice, which is the best rice to use when making sushi. Do NOT use short-grain rice (not sticky enough, hence falling apart when you cut them).
*For years and years, my family only eat Nishiki rice. The best tasting rice as far as i am concerned.
2 Be sure you're also using a bamboo mat(Makisu) to roll your sushi. A tightly rolled sushi rolls tends to stay put when you cut them.
That does help! I've been using sushi-grade rice, but not the same as yours, and while I have been using a bamboo mat, I was pretty sloppy with it. I didn't realize that could make a difference. Thank you!
wow! you are a realy good chef! my brother see these photo and says "hey sis, why don't do you do some sushi like these?" but i don't know the recipe...:S and my anser to him was: "well, grab the fishing rod, and when you fish something we talk about sushi" XD
