God i love this stuff, it's so "low class" but tastes so good! They say to make it right you have to have a lot of "wok air" (Wok hay if you're canto?) so i never try to make it but your pic is tempting @_@
I'll just clarify here for readers too since you already know what i think XD. When i said low class i put it in quotation marks to mean that i didn't really think of it that way my self, only that it's a common cheap food that you wouldn't find readily at more expensive places. I lived off the stuff when i was a kid because we were quite poor, and it was something delicious, meaty and filling we could get . In the end, those are what matters like you say
Despite it's inexpensive price, i hear it's very difficult to make if your wok is not hot enough. I only have an electric stove now, so i don't think i could make it well. ):
