Golden Pineapple Tapioca by theresahelmer Golden Pineapple Tapioca by theresahelmer
One of my favorite desserts.

:bulletyellow: Ingredients:

1 fresh Golden pineapple, cut into chunks
1 generous slice of ginger
1/2 cup brown sugar and 1 teaspoon cinnamon mixture
1 bag tapioca

:bulletyellow: Directions:

In a small saucepan, combine pineapple chunks, ginger, and sugar. Simmer for 5 minutes. Cool thoroughly.

Put your pineapple mixture into blender, blend well. Cool thoroughly. Cook your tapioca per package instruction.

Mix pineapple sauce and tapioca together. That's it!

The tapioca itself looks as if if you heated it up a bit more it would do nicely on a 'solid' dessert such as a pie or cake! But putting my yummy food fantasizing aside, I'm quite sure it tastes great on its own. <3 Especially with the cinnamon! A nice touch. :)

Thanks! I love cinnamon! I always add a touch of cinnamon when I cook my poultry dishes, really enhances the flavor.

Cinnamon has gotta be my favorite! I used to load up my coffee and tea with it. It enhances everything. :)

apology for taking so long to answer, I had a slight chlorine poisoning jeje
answering your question, not if these fruits can be finding or not in the U.S., but these are some of the fruits native to Colombia and South America that I know:

Lulo is a fruit of orange rind, covered with fine spines, jugoza and acidic pulp. I must say that I love in juices and jams :D

Curuba/banana passionfruit, is a type of berry oblong yellow-green, taste and smell sweet, delicious in juices with milk xD

Maracuyá/passion fruit (I imagine that this fruit if known in the United States), acid fruit of bright yellow shell, I love to prepare it in juice when the weather is too hot :P

Uchuva, small orange fruit that grows inside the plant flowers, I not remember very well the taste, it was something acid and sweet, jams made with this fruit are very rich

Guanabana/soursop (I think this also is well known), fruit green husk covered in what look like little thorns, its interior is white and a little slimy, it's very sweet and refreshing juices, specially prepared with milk :3

Well, those are all fruits that come to my mind, not sure if it can or can not get them in the U.S., the rest I know are well known xP

Lulo - i have never seen/heard of such fruit before.
Curuba - what? what? what? i am so jealous and i am so sad. i have never seen this fruit before and i am in love with the images i pulled up from Google.
Maracuyá - i have this fruit in my garden.
Uchuva - i have never seen this fruit in my local grocery stores ever. they almost look like tomatillos with a different color.
Guanabana - i grew up eating these.

thank you so much for your reply

Wow! I've never seen a pineapple version of this before! That does look good!

I always see the coconut version, and one restaurant in my area puts red bean in it.

I dislike the taste of coconut, milk or any dairy. This is the version that I can eat as well. I do make the versions with milk products from time to time.

I see. Yeah, I can only stand the taste of coconut in certain contexts (coconut tapioca being one), so I get what you're saying.

I just thought your pineapple version was quite original :)
