For the center instead of the regular filling of red bean paste or etc. 
How could you put chocolate for the filling inside?

I would guess that you would find the recipe for the moon cakes, themselves, then just substitute the bean paste for chocolate in equal amounts.

I found the moon cake reciepe and for the filling used a chocolate cookie recipe since I didn't have a moon cake press.
I made them circles, they tasted pretty good though.
But for chocolate, do you mean kind of like melted chocolate or something?

I would say to use a ganache or some sort of thicker chocolate-y paste.
